Job Title: Prep Cook

Position Overview:

As a Prep Cook at Queen’s Harbour, you play an essential behind-the-scenes role in ensuring our sushi station is ready for exceptional execution. You'll be responsible for preparing ingredients, maintaining cleanliness, and supporting the sushi team with efficiency and precision. This is an ideal position for someone looking to build foundational skills in sushi preparation while working in a fast-paced, high-performance kitchen environment.

Responsibilities:

  • Ingredient Washing, peeling, chopping, slicing, and dicing vegetables, fruits, and herbs.
  • Protein Prepping: Portioning and marinating meats, poultry, or seafood as per recipe requirements.
  • Batch Cooking: Preparing large quantities of base items like stocks, sauces, soups, or salad dressings ahead of time.
  • Maintain Cleanliness: Keep your station and equipment clean, sanitized, and organized at all times.
  • Support the Sushi Team: Work closely with sushi chefs and cooks by anticipating needs and replenishing ingredients during service.
  • Labeling & Storage: Ensure all items are properly labeled, stored, and rotated following food safety protocols.
  • Tool Maintenance: Assist with maintaining sushi knives and prep tools, keeping them sharp, sanitized, and ready for use.
  • Follow Guidelines: Execute prep tasks in alignment with kitchen standards and sushi-specific procedures.

Qualifications:

  • Basic knowledge of kitchen prep techniques
  • Familiarity with food safety and sanitation procedures
  • Comfortable handling knives and kitchen tools with a focus on precision and safety
  • Strong organizational skills and attention to detail
  • Able to take direction and work efficiently in a team-driven environment
  • Eagerness to learn and grow within a sushi or MediterrAsian-focused kitchen
